2010 Sauvignon Blanc
Produced from 2 and 3 cane vines, the fruit for the 2010 Sauvignon Blanc was harvested on 06 April 2010, at 22.7 Brix, with T/A of 10.5g/l, followed by crushing and gentle pressing. This was kept reductive, avoiding juice oxidation to retain aromatics, and the clear juice was cool fermented in a stainless steel tank. Temperature control ensured the ferment was long and slow to retain primary fruit character. Fermentation was halted at around 5g/l residual sugar to balance the natural acidity of the grapes.
The wine was finished and filtered prior to bottling in late August 2010.
Tasting Notes
Intense and complex nose shows not only tropical passionfruit and lime, but also florals and a seasoning of summer herbs like mint and fennel. The palate is vibrant and zesty, with hints of blackcurrant and ripe citrus in this powerful full-flavoured Sauvignon.
