Sourced entirely from single cane, one and two bunch per shoot vines, the fruit for our Pinot Noir is carefully hand harvested, then destemmed and the juice fermented on skins for 4 days, with daily plunging to extract tannins and flavour. The juice is 100% matured in French Oak for 10 months, during which time it undergoes secondary malolactic fermentation that further enhances flavour and texture.
The wine shows fragrant notes of ripe strawberry, raspberry and toasted oak. It has smooth, well rounded juicy flavours of berries, plums and gentle spice, which combine with silky tannins that linger on the palate.
