The most time and energy in the vineyard goes into growing our 24 rows of Pinot Gris. Leaves are removed by hand for sun ripening and the fruit is thinned to enhance airflow, promote ripening and increase flavour concentration.
Produced from 2 and 3 cane vines, the fruit for our Pinot Gris is harvested late in March when ripeness and flavour is optimal. The beautiful bunches of dusky pink grapes are gently pressed to minimize phenolic pick up, followed by a long, slow and cool ferment to retain primary fruit character and aromatics. The wine is matured on light lees to enhance texture. One barrel of Pinot Gris is created for limited release.
With aromas of poached pears and jasmine flower, the palate is mouth-filling, smooth and juicy. Complex flavours of fresh pear, a hint of spice and ripe stone fruit are balanced by a mineral freshness and a long silky finish.
