Produced from 3 cane vines, the Sauvignon Blanc is grown just 200m from the sea, with some leaf cover left to retain the fresh, green character of the fruit, while some bunches are exposed to the sunlight for more tropical flavours. The afternoon sea breeze enables healthy and full-flavoured fruit.
The clear juice is cool fermented slowly to retain primary fruit character and aromatics. Fermentation is halted when the residual sugars perfectly balance the natural acidity of the grapes. The wine is kept on light lees with occasional stirring to enhance the texture and mid-palate weight.
Fragrant nose shows passiongruit and pineapple, together with a “sea breeze” mineral note. The palate is rich and vibrant, with hints of blackcurrant, peach and apple characters, followed by a smooth and powerful finish.
Full-flavoured and refreshing it is perfect with pan-fried fish, fresh oysters, chicken dished, lemon risotto and summer salads. Enjoy now or within the next 3 years.
